The title of this post hails from one of my favorite songs by the ever lovely-sad Patty Griffin. I had a rough day yesterday (Sunday), and baking something almost always does the trick to lift me out of the bad spell.
So, I decided to make Alicia's Sour Cream Apple pie, which I haven't made for quite a while and adore.
I couldn't find my rolling pin anywhere, so to make the crust I had to rely on my old friend here:
I used Mark Bittman's simple crust from How to Cook Everything, which is such a useful book. Also, the crust is amazing. The recipe for the tasty pie itself is right here.
Yum. By the time that the whole apartment smelled of apples and cinnamon, and I was lifting the pie out of the oven, I felt soothed and contented.
As a bonus, there was plenty left over for late breakfasts:

Breakfast for pie is sensible and good. Baking pies to save yourself from a bad day is even gooder!

Oooo... That looks so yummy. And not too intimidating. I am working on actually following recipes and not just winging it. Its amazing... food actually tastes pretty good when a recipe has been followed. :)

You could easily have a career in cookbook photography; I think your blog itself would make a presentable portfolio.

Hi Emily
I hope your day improved. Your baking reminds me to try to be productive during a down time - sometimes, I am a bit of a wallower. I love Patty too. If I could sing, I would want to sound like her. Some of my favorite songs from her are "When it don't come easy", "Top of the World", "Be Careful" and "No Bad News".
I really appreciate your art and your blog. The combination of open honest thoughts and fun clothes and crafts is a perfect fit for me!Thanks for sharing your world!
Best,
Sue

Sorry about your rough day -- I'm glad you chose "make pies" over "cry" or "die." This looks delicious and I love your impromptu rolling pin!

Love your pie post, I think I might try to make it. Yum! By the way, anyone ever tell you that you have the face of one of those 60's pin up girls? You have great skin! Lucky! Have an awesome day!

I'm a newcomer to your blog. I've also checked out your etsy store. I love your work. After looking at your artwork I started brainstorming about how I could incorporate some of your prints into my daughters bedroom decor.

Love the mismatch napkins! Did you make them??

This looks absolutely delicious. After I finish off the strawberry rhubarb crisp, this is the next recipe!

When I have a rough day I just polish off some bakery treat(s). At least you do something constructive and make something tasty and beautiful. You seem the type that would make lemon bars of lemons:)

I'm making strawberry rhubarb crisp for the same reasons, have been having a bad time and don't see an end. Surely baking the crisp will do the trick!
I'll have to try this pie sometime too.

martha's pie crust is amazing as well (my husband goes crazy for this and everytime I make apple pie he asks how i made the crust) i've made it dozens of times:
Making the Dough
Makes enough for 2 single-crust pies or 1 double-crust fold-over pie.
1 In a food processor, pulse 2 1/2 cups all-purpose flour with 1 teaspoon each salt and sugar. Add 1 cup (2 sticks) chilled unsalted butter, cut into small pieces.
2 Pulse until mixture resembles coarse meal, with a few pea-size pieces remaining.
3 Add 1/4 cup ice water; pulse until dough is crumbly but holds together when squeezed. (If needed, add up to 4 tablespoons more ice water, 1 tablespoon at a time.) Do not overmix.
4 Turn out onto a work surface; knead once or twice, until dough comes together. Chill.

Pretty pictures. I want to make an apple pie now, but somehow on Sunday when my husband is gone all day doing home teaching and my 4 kids under 7 are running around, baking for 2 hours just isn't relaxing. But it used to be. Maybe in 10 years it will be again.

Our wine bottles are covered in flour for this purpose too. Hope you fell better.
